Des documents racontent l&rsquo;histoire fascinante du vin et de l&rsquo;huile produits depuis le XVe si\u00e8cle ; \u00e0 la fin du XVIIIe si\u00e8cle, alors appel\u00e9 \u00ab\u00a0Podere di Massa\u00a0\u00bb est devenu une propri\u00e9t\u00e9 de la curie de Fiesole, puis une partie du \u00ab\u00a0Spedale di Bonifazio della citt\u00e0 di Firenze\u00a0\u00bb. Pour qu&rsquo;un grand terroir s&rsquo;exprime au mieux, il faut beaucoup d&rsquo;humilit\u00e9 et la conviction forte qu&rsquo;il faut tout faire pour influencer le moins possible ce que la nature a \u00e0 accomplir.
